Mango Chutney

Ingredients

1 1/2kgRipe Mango
1 tspMustard Seeds
1/2 tspTurmeric
1/2 tspSalt
1 cupWater
5 cupsSugar
1/4 cupVegetable Oil

Method

  • Skin, remove seeds and cut the mango into small cubes.
  • Heat the oil in a pan. Add the mustard seeds and as the seeds start to crack add the turmeric, salt and mango pieces.
  • Stir thoroughly, add the water and bring to the boil. Add sugar and continue boiling.
  • Stir continuously and when the chutney thickens remove from the heat.
  • Cool to room temperature. Refrigerate and serve cold.
